2 Tbls Butter room temperature
4 oz. Cream Cheese room temperature (I used 1/3 less fat)
2/3 cup Brown Sugar
2 Eggs
1 tsp Vanilla
1 1/4 cup Whole Wheat Pastry Flour
1 1/4 cup Rolled oats
1 tsp Salt
1 tsp Baking soda
1-2 cups semi-sweet chocolate chips (I did 2 but it was a lot-I'll do 1 next time)
In a large bowl, cream together butter and cream cheese. Then add sugar continue to cream together. Add eggs and vanilla and mix. Then (if you want to dirty more dishes) in a separate bowl, mix whole wheat flour, oats, salt, and baking soda. Add dry ingredients to butter-sugar mixture. Mix until just combined scrapping down the sides of the bowl as needed. Don't overbeat!! Mix in chocolate chips and refrigerate for 30 min-2 hours.
Pre-heat oven to 325 degrees. Use heaping tablespoons to put dough onto a baking sheet. I prefer to use parchment paper/silicone pad on top for an easy cleanup! Bake for 10-12 minutes until golden brown. Remove from oven and allow cookies to cool. Then Enjoy!!!
Makes about 24 cookies.
